is Muxama
Muxama
is a tuna loin salted and dried in an artisanal way that remotes past
centuries, when products had to be preserved to last until the next season. Is
a Portuguese delicacy form South of Portugal and is not widely consumed in
Portugal, probably because of the price, as is not a cheap product. It is
typically found in the Algarve region.
The texture is similar to Parma Ham, and
sometimes is called the ham of the sea.
It can be used as a starter, snack in
salads or even be part of a main meal.
In Algarve can be found in Olhão Market or at Apolónia Supermarket in Almancil.
After cutting thin slices with a knife I
like to add some oil and dried oregano and serve with thin slices of toasted
sourdough bread.
