Egg and potato curry

The most delicious egg and potato curry!
Cut a medium small onion into half moon and let it caramelized in olive oil.
Add half teaspoon of garlic and about 8 baby potato’s peeled and halved. ( best quality).
Let it sweat for two or three minutes and add coriander seeds powder, cumin, paprika, asafetida, turmeric, chili, ginger and Portuguese curry powder and salt.
Add half tin of tomatoes and let it cook for 15 to 20 minutes. Once the potatoes are cooked add an egg and allow to poach. Serve with basmati rice.

Notes; add a little bit of water so it doesn’t burn.
