Prawn Moqueca My Style

 

For 4 people

250g x 4 Tesco’s finest king prawns

Red Palm oil 0.5 tablespoon as the flavor is very strong

2 medium Onions – I minced and the other sliced

1 red pepper, half yellow and half green

2 teaspoons of garlic

1 bay leave

1 chili

1 tin of tomato - tomato 2 tablespoons of tomato paste

A bit of curry, smoked paprika, ground coriander, black pepper, asafetida, ginger

 1 tin of coconut milk and a small piece of creamed coconut (easy otherwise tastes like soap)

Lime

Parsley (lots)


Step 1

Marinate the prawns with salt, parsley and lime juice.

Step 2

Fry the onion in palm oil a a bit of olive oil and bay leave.  Once cooked add the garlic and and peppers in stripes. allow to cook for 10m. add the tomato's and coconut milk  and species and let cook another 10m. Add chopped parsley and prawns and cook for 10m. Serve with more parsley and lime juice.

Can cook in advanced and add the prawns at the end. Perfect for parties
