Shakahuka Portuguese edition

Today, I just had one of the most amazing "Shakshukas"  I’ve done.

The first bite was like being back at our kitchen in the countryside,  when my father was alive, when we didn't have electricity in the house and when we had so much tomatoes that we would tomatoes at every meal.

Back in the same kitchen where I have one of the most sweet memories of my childhood, laughing so much with my sister that the tomato I had in my mouth splashed out and we had to clean everything very quiclky, before mum arrive.

Great one garlic and fry in a little bit of olive oil.

 Add six small amazing quality tomatoes,  chopped in half, some salt and let them fry. 

Add a tiny little bit of tomato paste and a little bit of hot water allowing to cook

 Add some oregano and then crack two eggs in the sauce.

Add a pinch of chilies and  top up with more oregano.

 Leave to cook covered and serve with warm bread.
